VARIETY AND VINES: 100% Pecorino;
PRODUCTION AREA: Vineyards located in the cooler areas of the southern part of the Abruzzo region with predominantly northern exposure;
SOIL – ALTITUDE: medium-textured, loose, cool clay soils with an altitude of 100-150 meters above sea level;
VINEYARDING: espalier with a density of 3800 plants per ha and production of 11 tons per ha.;
HARVEST: in the period following the first week of October, selecting the best grapes;
VINIFICATION: destemming of the grapes and contact of the skins with the must for 8 hours at a temperature of 18° C, separation of the must from the skins and its clarification by decantation, transfer of the clear must to steel tanks for alcoholic fermentation at a temperature of 16°;
AGING: 4 months in steel tanks of which 1 month in contact with the fine lees, bottle aging for about 10 days before release for consumption. Store at a temperature of 12°-14° C;
ALCOHOLIC STRENGTH: 13% vol;
COLOR: straw yellow, pale, brilliant;
BOUQUET: delicate bouquet with floral sensations and notes of ripe tropical fruit;
TASTE: harmonious, balanced, soft and fresh with medium body and persistence;
SERVING TEMPERATURE: 12-14 °C;
GASTRONOMIC ACCOMPANYMENTS: perfect as an aperitif and fish dishes, it can also be paired with cheeses and soups.

A straw-yellow wine, Pecorino comes from a white grape variety. A straw-yellow wine, Pecorino comes from a white grape variety. It is a sunny wine and the scents that distinguish it are very marked and clear. Very savory, fresh and perfumed, endowed with depth and character it releases scents reminiscent of fresh yellow-fleshed fruit. The fruit is sumptuous and warm. There is no lack of decisive mineral and iodine notes, aromatic herbs such as thyme and marjoram and a whole range of suggestions reminiscent of licorice, anise and mint. On the palate the Pecorino is carved in rocks, with firm acidity, ample structure, alcohol that doesn’t mess around and good roundness. Sharp, but never rude. Persistence and thickness are to die for. This is not a wine that aspires to subtle finesse, every perception is amplified, it has lots ofpulp and is a wine with attributes and lots of character.
