SOIL – ALTITUDE: mixed mineralogy predominantly calcareous-dolomitic, deep, loamy texture, fair nutrient content. Average altitude of 250m above sea level;
VITICULTURE: hilly with slopes from 18 to 25 percent;
HARVEST: by hand, late September;
VINIFICATION: traditional red vinification with 8-day maceration at a temperature of 25°C; racking and decanting into small oak barrels;
AGING – STORAGE: at least 4 months;

Cabernet Sauvignon DOC is a wine with a concentrated ruby red color, whose organoleptic characteristics are well defined: aromas of cherry and berries, bell pepper and herbaceous notes on the nose, while on the palate it is majestic and structured, with pleasant persistence and dense tannins that make it suitable for long aging.Perfect with red meats and roasts, it is ideal paired with kid, lamb, porcini mushrooms and aged cheeses. Interesting pairings can also be with truffles or with first courses such as risottos.
